Pho is a Vietnamese noodle soup made with a dark, umami-rich broth seasoned with herbs and spices. It's served with a protein, vegetables, and many different garnishes.

Pho is traditionally a meat heavy dish, but this vegan version gets its flavor from veggies, sauces, and seasonings.

Every pho broth calls for 5 different spices: star anise, cinnamon, coriander, cardamom, and cloves.

What you'll need for the broth: -Onion -Ginger -Garlic -Vegetable oil -Whole spices -Vegan "beef" broth -Soy sauce -Nutritional yeast -Vegan fish sauce -Vegan oyster sauce -Sugar -Salt

Other ingredients: -Tofu -Broccoli -Baby bok choy -Thin rice noodles -Bean sprouts -Thai basil -Jalapeños -Limes -Cilantro -Green onion -Sriracha -Hoisin sauce

Step 1: Make the broth - sauté the ginger, garlic, onion, and spices

Step 2: Add the remaining broth ingredients and simmer for 1-2 hours

Step 3: Strain the ingredients out of the broth and add vegan oyster sauce, vegan fish sauce, and sugar

Step 4: Press and marinate the tofu

Step 5: Pan fry the tofu

Step 6: Add the veggies to the broth

Step 7: Boil the rice noodles

Step 8: Prepare the toppings  (Thai basil and other herbs, bean sprouts, jalapeños, limes) and sauces (hoisin sauce and sriracha)

Step 9: Prepare each bowl

Step 10: Serve! Each person can add toppings to their liking
