Coconut  Crusted Tofu


This vegan coconut crusted tofu is pan fried until nice and crispy, then served with stir fried veggies over coconut jasmine rice.

The tofu is breaded with shredded coconut and the flavor pairs nicely with the sweet and spicy pineapple chili stir fry sauce.

What you'll need: -Tofu -Soy sauce -Rice wine vinegar -Garlic -Cornstarch -Coconut milk -Shredded coconut -Coconut oil

-Canned pineapple -Fresh ginger -Brown sugar -Vegetable broth -Lime juice -Veggies -Jasmine rice -Lime zest

Step 1: Press the tofu to remove the water, then slice into cubes

Step 2: Marinate the tofu

Step 3: Drain the tofu and coat in cornstarch

Step 4: Dip in coconut milk

Step 5: Coat in shredded coconut

Step 6: Pan fry until golden

Step 7: Make the stir fry sauce

Step 8: Stir fry the veggies, then add the stir fry sauce

Step 9: Prepare the coconut lime rice

Step 10: Top with green onions and lime wedges and serve!
