Vegan Spanish Rice

This vegan Spanish rice (or Mexican rice) is the perfect side for tacos, burritos, or any Mexican dish!

It's made with pantry staples, including canned tomatoes, vegan bouillon, and seasonings.

What you'll need: -Olive oil -Onion -Garlic -Rice -Vegan "chicken" broth -Diced tomatoes -Oregano -Salt -Pepper

Step 1: Sauté the onions and garlic

Step 2: Add the dry rice and stir to coat

Step 3: Add the broth, tomatoes, and seasoning

Step 4: Cover and let simmer until the rice is tender, about 15 minutes
