This Mediterranean quinoa salad is made with fresh chopped parsley, flavorful sun-dried tomatoes, crunchy cucumbers and peppers, and a tangy lemon tahini dressing. It can be served warm or cold, and makes a great lunch the next day.
Vegan Salad Recipes
I cannot with boring salads. Every good salad should have a few components:
- Delicious greens (massaged kale, spring mix, or your fave lettuce) and/or grains
- Vibrant, colorful veggies
- A protein (tofu, seitan, and/or beans)
- Nuts or seeds
- A bomb dressing recipe
