Fresh cucumber salad has always been a summer staple for me. We always grew cucumbers in the garden and when mid to late summer rolled around, we'd have more cucumbers than anyone could possibly eat.
This cucumber onion salad with vinegar and oil is the go-to way to consume the ever present supply of garden cucumbers. Toss in some chopped onions, fresh basil, and a good 30 seconds' worth of freshly ground black pepper and you've got yourself a refreshing lunch or side dish for a cookout.
This dish is much easier to make if you eyeball it rather than measuring. I have a few of those kinds of recipes on the blog (like Pasta Salad with Italian Dressing and Easy Vegan Gravy) and converting my "pour of this" and "sprinkle of that" to an actual recipe is uh, challenging.
Of course I provided actual quantities in the recipe, but once you've made this salad a few times, you'll be able to mix up some cucumbers and veggies and add a little oil here, vinegar there, and your favorite herbs and spices.
🔪 Instructions
Combine the sliced cucumber, onion, and garlic in a bowl. Add the white vinegar, apple cider vinegar, olive oil, fresh herbs, black pepper, salt, and chili flakes, if using.
Stir to coat the cucumbers.
Taste and adjust flavors adding more oil and/or vinegar if desired, then cover and chill for 1 hour before serving.

- Add red pepper flakes for extra spice.
- Feel free to mix up the veggies! Add sliced radishes, summer squash, or tomatoes.
💭 Tips
- Don't add too much oil to the salad because it may thicken when chilled. If this happens, just let it sit for 15 minutes or so and give it a stir before serving.
- Any kind of cucumbers will work for this salad and it's up to you whether you peel them before slicing. If they are fresh out of a garden, I like to keep the skin on, but if they have a waxy coating from the grocery store, it can help to peel them.

Ingredients
- 1 large cucumber
- ½ onion, thinly sliced
- 2 cloves garlic, sliced
- ⅔ cup white vinegar
- 2 tablespoons apple cider vinegar
- ¼-1/3 cup olive oil
- 2 tablespoons fresh basil or other fresh herbs, sliced
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon sea salt
- Sprinkle of red chili flakes (optional)
Instructions
