This vegan beet smoothie recipe is made with raw beets, berries, banana, and ginger. It's sweet, tart, and has a nice earthy flavor and bright pink color from the beets.
This smoothie was another "beets from the CSA box" recipe (the other one was this Roasted Beet Salad with Arugula and Vegan Honey Mustard Dressing).
I know beets are a divisive vegetable, especially eaten raw, but I love the flavor and vibrant color, especially in juice and smoothies. I really enjoy fresh beet juice, but not having a juicer at home (anymore—cleaning that thing was a pain!), I opted to make a smoothie with my CSA beets. Plus, all the fiber stays in the smoothie and it's more filling than straight up juice.
While I love a good green smoothie, I didn't want this one to become a salad in a glass from too many savory flavors. The beets pair well with tart lemon juice and blueberries, have some sweetness from the frozen banana, and have a bit of nuttiness from a spoonful of sunflower seeds.
I'm a big fan of sunflower seeds—they bring protein, fiber, and vitamins similar to the nutritional profile of other nuts, but at a fraction of the cost. I've been using them to replace raw cashews in some recipes, like my Cultured Cashew & Sunflower Seed Cheese.

- Beets
- Blueberries
- Ginger
- Banana
- Sunflower Seeds
- Almond milk (or any other non-dairy milk)
- Fresh lemon juice
🔪 Instructions
Peel and chop the beet. You can use any kind of beet—regular red beets, golden beets, or these striped chioggia beets. I wasn't expecting stripes when I cut open this beet, but it was a nice surprise!
Combine all of the ingredients in a blender. A high speed blender like a Blendtec or Vitamix is ideal for the smoothest smoothie.
Add more liquid if needed to thin out the smoothie.
💭 Tips
- I used blueberries, but you can use any kinds of berries for this smoothie. They don't need to be frozen, but it's best if the berries and/or the bananas are frozen.
- If you purchase beets with the greens still attached, you can save them and cook them like any other leafy greens.

- 1 small beet, peeled and chopped
- 1 cup frozen blueberries
- 1 inch fresh ginger, peeled
- ½ cup frozen banana chunks
- 1 tablespoon sunflower seeds
- 1 cup non-dairy milk
- ½ cup water
- Juice of ½ lemon
Instructions
- Combine all ingredients in a blender and blend until smooth.
- Add more water or non-dairy milk if you'd like the smoothie to have a thinner consistency.
- Taste and adjust flavors if desired by adding a sweetener if you prefer sweeter smoothies, or more lemon juice if you'd like some more tartness.
