The very first post on Seitan Beats Your Meat was published two years ago today! Over the past two years, we’ve been through so much, including bacon-infused vodka, Mad Men Vegan MoFo, the discovery of vegan meringue, and so much cake. In honor of this special day, I thought I’d share my top five recipe posts from the past two years. In order to help my decision process, I’ve only included recipes that were originally posted on this blog, or written by me. So, recipes from books and other blogs, and classic drink recipes, don’t count.
The very-interesting-looking cupcakes above are the very first recipe posted on Seitan Beats Your Meat, Maple Bacon PBR Cupcakes. That was my way of including six recipes in this post. But here are my top five:
Vegan Lucky Charms put Seitan Beats Your Meat on the map! They even got their own hashtag (that’s not to say anyone besides me used it): #veganluckycharms. When the vegan meringue craze started, I decided to pipe out hundreds of tiny marshmallow-y meringues shaped like hearts, stars, horseshoes, clovers, blue moons, pots of gold, rainbows, and red balloons, then add them to cereal.

What’s better than mint chip ice cream? Replacing some of the chocolate chips with Thin Mint cookies and topping it with more crumbled cookies. If you ever find yourself with extra Girl Scout Cookies, the next logical step is to make Thin Mint Ice Cream.

Nope, these pancakes don’t contain any magical ingredients and they are not stuffed with cookies and candy. It’s just a damn good tried-and-true pancake recipe. I used to make a non-vegan version of this recipe while growing up, and I’ve adapted it to remove the eggs, milk, and butter. Make just a few, or quadruple the recipe and make a stack of twenty.

This one was actually my attempt to provide a variety of recipes in the top five, instead of all candy, dessert, and brunch. Joke’s on me though because this post from the very early days of SBYM contains a really awesome Pad Thai recipe. It was popular on Pinterest for a while, and someone emailed me about how she found the recipe on Pinterest and made it with chicken instead of tofu. I will turn in my vegan badge ASAP.
