Vegan Pie Recipes to Help You Celebrate Pi Day!
Here at Seitan Beats Your Meat, we like pie and share many a pie recipe. When it comes to celebrating pie day, I have a wealth of resources (vegan pie recipes) to make 3/14 the best day it can be. Whether you’re partial to a traditional fruit pie with a lattice crust, a chocolate pudding pie, or feel that pizza for dinner is just as good as a dessert pie to celebrate, I’ve got you covered. If it’s snowing where you live today, key lime pie is a great way to pretend you’re spending the afternoon on the beach. Since these pies are made in mini springform pans, each one can be your own personal pie, naturally.
This peach pie recipe was created during Mad Men Vegan MoFo 2013. Despite its cinematic qualities and glamour, it’s really an honest to goodness fruit pie. While the filling calls for peaches, you could swap the fruit out for apples, blueberries, cherries, or another filling of your choice.
If you prefer mini pies, or would prefer the ease of baking your pie in a muffin tin, these mini s’mores pies will be right up your alley. Starting with a graham cracker dough crust, the pies are filled with thick chocolate pudding, and topped with toasted aquafaba marshmallow.
I broke out the pi cookie cutter to garnish this vegan version of a lemon meringue pie, using aquafaba for the meringue. The pie filling is lemony tart, and it’s topped with baked chickpea meringue.
Using a similar recipe to the first pie in this roundup, this full-size key lime pie is on the cusp of being a margarita pie with the additional salt and salt garnish. Coconut cream whip is optional, but recommended.
We’re now leaving pie territory with this recipe for Oreo cheesecake made with a speculoos/Biscoff crust. If it looks like a pie and it’s baked in a pie plate, isn’t it more pie than cake. I’ll let you be the judge.
If making pies isn’t really your cup of tea, you can still enjoy a Pi Day breakfast with these apple pancakes topped with apple pie filling. They’re really an autumnal recipe, but apples are cheap and abundant at the grocery store year round. You may not have the mini pumpkin and crunchy leaves as props this time of year, but you’re really only eating the pancakes (I’d think.)
